Su - Ham and Potatoes in the crock pot.  The potatoes were a little thick cut so it took 8 hours on high (ish) to get it all cooked.  We actually ended up having it for dinner on Monday and lunch most of the week.
So, instead of what was cooking we had squash risotto from Trader Joe's, and whatever else was in the fridge.
M - Eating the ham and potatoes.
T - Pesto fish in the oven with feta and a whole host of veggies.  Also found time to make pumpkin bread.  We shredded all the pumpkin on Sunday.  Now we have lots of pumpkin ready to go.  I processed oats to make oat flour and replaced the wheat flour.  The pumpkin seeds don't add a lot.  Also got hummus made.
W - Frozen pizza then trick-or-treating!

Oct 11 - 19, 2012

Sometime in the first week I made summer squash soup.  It was super easy and used up a lot of squash.  It turned out very yummy.  I did make a really big mess trying to blend it all.  There was hot soup everywhere.  Since it turned out I purchased an immersion blender so it will be easy to puree soup right in the pot.

Sunday, September 16, 2012

Sept 16 - 22, 2012

Su - Homemade turkey chili with squash.  Brown turkey, add onion and squash.  In crock pot add black beans, white beans, 2 big cans crushed tomatoes, fresh diced tomatoes, green pepper, chili powder (med hot), ground chipotle.  It was a bit spicier than usual, but we just added a bit of sour cream to calm it down.
Cheesy potatoes - diced potatoes.  I left the skin on and used the Vidalia Chop Wizard to dice them really tiny.  Add a can of cream of chicken, can of cheddar cheese soup, half a stick of butter (also diced with the chop wizard).  Put in a 9x9 pan and cook at 350 degrees for about an hour.  Would go a lot faster if you pre-cooked the potatoes in the microwave.
We served the chili with the potatoes to get chili cheese potatoes!
M - More chili cheese potatoes
T - Wraps
W - Frozen Pizza
Th - Salsa chicken in the crock pot - instead of jarred we'll put together the salsa.

Saturday, August 18, 2012

August 17 - 23, 2012

F - Capreze Sandwich.  Slice a ciabatta bun in half.  Coat each half with olive oil.  To one half add a large slice of tomato and two slices of fresh mozzarella.  The other side gets fresh basil.  Put both sides under the broiler for 3 minutes.  Shove together and eat.  We also had strawberries and blueberries.
Sa - Hot dogs over a campfire in the backyard and Inner Goddess Salad.  I guess there will also be marshmallows.
Su - Breakfast will be beet pancakes (just add beet to pancake mix).  Grilled fish and summer squash casserole.  The recipe for the casserole is huge so it may need some adjustment.
M - Slow cooker sausage and peppers served over noodles.
T - Chicken burgers from Sam's Club on ciabatta buns.
W - Frozen pizza
Th - Leftovers

Tuesday, August 7, 2012

Su - Spaghetti sauce with squash.  It used up some summer squash and was pretty darn good.  I would up the spices next time around.  I had enough for 6+ meals.
M - More pasta with the spaghetti squash.
T - Egg Bake which has replaced the frittata.  I can't figure out the timing on the frittata, so I've moved on to egg bakes.  I put in potatoes, various veggies that I pre-cook, season the eggs, and add some cheese.  The seasoning I did today is Fox Point.  Yummy!
W - Frozen Pizza

Sunday, July 22, 2012

July 21 - 28, 2012

S - Sauteed Beets and leftovers.  We already cut off the tops of the beets, so I may throw in some other greens with the beets.
M - Pesto pizza.  When we do homemade pizza we use Mamma Mary's crust.  This one will have pesto sauce, tomatoes, greens, and fresh mozzarella.  Ivy may want something else so chicken nugget pizza may be making a comeback.  Good thing the crusts come in two packs!
T - Grilled chicken, potatoes, and green beans.  I'll coat the potatoes and green beans with olive oil and a bunch of spices, put them in a foil packet, and send them out to the grill with Dave.
W - Frozen Pizza
Th - Suddenly Salad (or leftovers)
F - Frittata friday!  I need to get some more flavor and spice into the frittata this time.  The last ones have tasted a bit healthy.
Sa - I leave for BCCE, so it is up to Dave to feed he and Ivy for a week.  I may plan a few meals for them after I see the CSA produce list, but they usually don't get followed.

On the side I got smoothie pouches made today to streamline the smoothie process.  I did some without the frozen yogurt since I still have some non-frozen yogurt around.

I'll also be making more pesto.  I froze the stuff I had purchased from Sam's club, and will likely freeze some of what I'm making.

Monday, July 16, 2012

July 15 - 21, 2012

Su - Fairy Garden Party!!  Wrap with guacamole, some leftover beef, baby red kale, and kohlrabi.  Dessert is whoopie pies (family secret recipe). :)
M - Pesto on pasta with some chicken, and fruit on greens with balsamic vinaigrette.  I need to make a lot of pesto.  I'll use the recipe as a guideline and mix in a variety of greens, nuts, and cheeses.  If it sucks I'll just add a shot of our favorite flavor saver.  This can save a batch of hummus that I didn't measure everything correctly, so it should work for pesto. :)
T - Ham Salad on greens.
W - Frozen Pizza
Th - Foil packet roasted potatoes and pesto fish (on the grill instead of crock pot this time).
F - Leftovers.
Sa - Stirfry with whatever is still in the fridge.

Sunday, July 8, 2012

A favorite breakfast that is great with our homegrown raspberries is crepes.  This recipe you mix them up in the blender and it works in my little smoothie blender.

Happy 4th of July!

Friday, June 22, 2012

June 21 - 30, 2012

We got our first CSA order and Norm did a great job.  Here is some stuff we will be making with our fresh from the field produce.

Th - Grilled Marinated chicken on a bed of veggies.  Quite a few salad greens this time around.
F - Swiss Chard Frittata I'm not worried about the eggs so I'll use 6-7 whole instead of some egg whites.  We also don't have any swiss cheese so we will grab whatever is in the drawer.
Sa - Stovetop Mac and Cheese with a salad.
Su - Quinoa Salad - I had planned to make this when the accident happened.  Now I'll get it done.
M - Hummus on flatbread or pita with whatever we have laying around.
T - Crockpot Lasagna
W - Frozen Pizza
Th - Leftovers
F & Sa - at Dave's parents

This week I also need to replenish my supply of oatmeal and eggs for breakfast.  The oatmeal freezes great, I'll try freezing the eggs.

Lunch will be leftovers!

The watermelon pudding last week was interesting.  It tastes just like watermelon.  Turns out Dave and Ivy don't really like the taste of watermelon in a different texture.  I did put some chocolate chips with some and it was pretty darn yummy.

Friday, June 15, 2012
