Su - Smokey Turkey Shepherd's Pie - This is a Rachel Ray 30 minute meal that I can't cook in 30 minutes. I can however do it in under an hour. It also says it serves 4, but those would be huge servings. I cut it into 12 servings and sometimes we have seconds. I used instant potatoes instead of peeling, cooking, and mashing my own. Turned out great.
M - Leftovers (plan was chicken wild rice soup)
T - Mac & Cheese - This was better, but still not quite there. I don't think I cooked the sauce quite long enough to thicken. It was better leftover.

Funny thing about the quinoa chickpea salad. When I was cruising Pinterest the other night this looked better than the desserts. Dave was convinced at that point that I've gone off the deep end.

Su - Finally got around to making the tortilla soup and it was delicious.
M - Smoothie and leftover pancakes. The smoothie lately is homemade yogurt, frozen bananas, frozen pineapple, splash of grape juice and a fresh orange. I started cutting off the peel like this and instead of segmenting I just cut the whole thing into pieces.
T - Leftover lasagna from the freezer.
W - Frozen pizza

Su - Chicken Enchilada Past to take to Ron and Pam for the big game.
This week I added diced up orange and pomegranate seeds to the homemade yogurt for lunch. I figured out how to get the darn pomegranate seeds out easy using the spoon thumping method.
I also am having a lot of fun making my own Lara bars. They are super easy and crazy yummy. Here is a generic method. An the best ones so far (I think) are the apple pie! They taste like dessert but have no added sugar. Just apples, dates, and walnuts!

M - Tortilla Soup. I'm also going to make key lime pie snack bars (completely healthy) and get tomorrow's dinner prepped in the crock pot.

Su - Crock pot Lasagna with cabbage leaves instead of noodles. The cabbage leaves were good. Unfortunately, I cooked it on high instead of low and the cheese separate. Still tasted OK, but not great. Cook the lasagna on low for 4 hours or so.
M - Shrimp and Asparagus Risotto finally! It was super tasty. This site will teach you how to make risotto.
T - Taco on doritos

Sa - BLT Pasta Bake - This is a Rachel Ray 30 minute meal with bacon, leek, and tomato with a gueuerre sauce. I make half the sauce and next time will put twice the tomatoes. I didn't bake it at the end. I didn't need to clean another pan. The sauce has mustard so I used the spicy stuff Dave got for Christmas.

Su - Hummus, carrots, celery, green peppers, and ham. I make hummus so often that I treat is like one of our reactions in lab. I put the "reagents" on a post-it note and place it on the inside of my cabinet. I don't need directions anymore just quantities.
M - Pesto tilapia, Trader Joe's sweet potato fries, roasted brussel sprouts (with cut up bacon sprinkled on top before cooking, and no refined sugar baked apples. Next time with the baked apples mix the oats and syrup, and cinnamon together before putting on the apple.
T - Pasta and meatballs.
W - Frozen Pizza
